Retro is in and this simple, stylish salad just shows that some things never go out of fashion.

We’ve left out the mid-century abominations (jelly and marshmallows!) and kept it classic. Crisp apples and celery are essential for the crunch, and walnuts and sultanas add extra bursts of flavour and texture to the salad.

Waldorf salad

Serves 4

Ingredients

2 green apples (such as Granny Smith), thinly sliced

1 lemon, zest and juice

1–2 celery sticks, thinly sliced

½ cup walnuts, roughly chopped

½ cup sultanas

Dressing

3 Tbsp mayonnaise

3 Tbsp natural unsweetened yoghurt

2 Tbsp lemon juice

1 tsp Dijon mustard

Salt and black pepper

Method

  1. Toast the walnuts in a dry frying pan until fragrant, then leave to cool.
  2. Zest and juice the lemon. Set aside 2 tablespoons of lemon juice for the dressing and sprinkle the rest over the sliced apple.
  3. Whisk all the dressing ingredients together in a small bowl.
  4. Combine all the salad ingredients in a large bowl, add the dressing and toss gently. This is a lightly dressed salad – you don’t want the freshness obscured by too much dressing.
