A refreshing solution to a long drive is a cool thirst- quencher. Coconut water with fresh pineapple juice and mint is rehydrating and good for you without the added sugar. You can even turn it into a slushy, simply by giving it a good shake when it’s half-melted. Makes 2 x 500ml bottles

Ingredients

1Pineapple, fresh, skin removed (Main)
700 mlCoconut water (Main)
½ cupMint

Directions

  1. Juice pineapple and mix with coconut water in a jug to combine.
  2. Place half the mint into each bottle and fill with pineapple and coconut water, leaving a 3cm space in the neck of each bottle.
  3. Place each bottle upright in the freezer overnight before placing the cap on top. Take bottles out of the freezer just before hitting the road and enjoy the icy cold contents. Turn it into a slushy by giving it a good shake when contents are half-melted.
